What a terrible thing to happen, it seems so much harder when people pass away unexpectedly. My thoughts are with you and your school.

How about a scrapbook with each child doing a page of their happy memories of the class?

Or clay work? Everyone makes a tile along a theme, like butterflies, and all the same size (say 10cm x 10cm) and get a friendly secondary school to come in and help glaze them and then take them to fire them if you haven't a kiln. Then a friendly tiler can put them up as a mural on a wall in the quiet garden.
